The manufacturing process includes refining (chemical cleaning and heating) for increasing its shelf life which strips the oil of its flavor and certain benefits.

Extra Virgin Olive Oil tends to have more Polyphenols than its regular counterpart. Polyphenols are a type of antioxidant which are lost during the refining stage. Also, people opt for cold-pressed, unfiltered, or stone-pressed products. With these options, the oil has not undergone heating or filtering, which usually adds chemicals to the oil.

So, why go for the unrefined and unprocessed Extra Virgin Olive Oil?

It has a more pleasant taste (bit fruity, bitter and slight peppery- similar to biting into an olive). It contains fewer chemicals and has higher concentration of antioxidants, vitamins, and other natural ingredients.
